Empanadas for a Fiesta! Part Dos



Black Bean Filling:

1 can of rinsed black beans
1 diced onion
1/2 ts of cumin
1/2 ts of salt
1/4 ts of pepper
juice from 1/2 lime
1 tbs cilantro
1 chipotle in adobo
1 C of shredded cheddar

  2. Score! I took the leftover filling, stuck it in a pie plate, tossed the dough scraps on top, and baked it! I loved it. And, I saved all the pretty empanadas for the party. I was proud of myself for that :) It's hard to save the pretty ones, you know?
