Drowning "Effed Up Cake" Sorrows in Mayo, Vinegar, and Chicken







Stupid cake, or maybe it was stupid me.  But in any case I turned what should have been a declaration of baking excellence into a temple dedicated to mediocrity. Sad.  Oh well.  Live and learn.

Alabama Barbecued Chicken.

Ingredients and Directions:

1 chicken (take shears, cut out spine, press flat, cut through the midline via the breast bone, and voila-- chicken halves!) seasoned with salt and pepper

1/4 C lard melted in microwave (30 second zap and stir)

Grill chicken over indirect heat (with the lid on) with the addition of soaked hickory chips to the lump charcoal for 1 hour.

Then baste chicken with lard.  Continue grilling (with the lid on) for 45 minutes.

Dunk prepared chicken into RESERVED sauce and let sit for 5-10 minutes


Sauce:

2 C of Mayo

1/2 C of apple cider vinegar

1/2 C of pickle juice

1 ts of chili powder or 1/2 ts of cayenne

Whisk all together.

Set aside a bit of the sauce for serving and use the rest to drown the chicken...  And your sorrows.
