A Cheesy Poem and a Cheesy Cookie to Say Hello to Summer



Broken eggshells of  baby blue kissing spring goodbye
as little birds leave the nest but not quite ready to fly

Hello summer, languid  days for splashing and sunscreen and popsicle stains.
Lawnmowers whirring and smell the grills.  Dragonflies, bees and carnival whirls.

Melted gum on tarmac lots.  Legs seared on car seats blistering hot.
Watching the sky as clouds drift by and summer drifts away.

Cream Cheese Lemon Clouds

Ingredients & Directions:


2 1/2 C of cake flour
1 ts of baking soda
1/2 ts of salt
Whisk these together in a large mixing bowl and set aside




1 stick of butter (room temp)
4 oz of cream cheese (room temp)
Cream these two together until fluffy with the mixer (med. speed)



Add 1 1/2 C of powdered sugar to butter & cream cheese mixture in the stand mixer's mixing bowl (note-- cover mixer with kitchen towel when mixing in the sugar to keep it from exploding everywhere--  Thanks for that tidbit, Kat :)

Then beat in 1 egg, 1 1/2 tbs of lemon juice, & 1 ts of lemon zest.


On stir setting, gradually add flour mixture until just mixed.



Using a 1 in. cookie scoop, scoop dough, put in a bowl of powdered sugar and roll around until completely covered.


Place sugar coated dough balls onto lined cookie sheet and bake for 12-14 minutes at 375°
