I had this chicken in the fridge that needed so be utilized ASAP. Enter stage right-- Spatchcock...
Ingredients:
1 whole chicken
salt
pepper
butter
white wine
rosemary
Preheat oven to 400°
Spatchcock chicken.
Heat flame-safe roasting pan over med/high heat.
Smear chicken with softened butter, season generously with salt, pepper, and rosemary.
Pour wine into pan.
Add chicken cut side down and roast at 400° for 50 minutes.
Remove Chicken from pan to a plate.
Put roasting pan back over the burner (med-high heat) and add 1 1/2 C of cream. Reduce by half and taste for seasoning. Add accumulated juice from plate to sauce and serve with our once feathered friend.

Thanks Joline! Of course, I would like to note that I had a intended on a follow up w/ the chicken coming out of the oven and the rest of the sauce... So, it seams that 7 minutes is my limit for focus :D
